& is there a restriction on styles that can be brewed? Might buy some hops and get something on for this. Cheers.

No!

The Judges will just be presented with the beer and a Cat/Sub Cat.

The hops are disclosed by the brewers to the comp. database for when the results are announced but the Judges are blind to the hops used.
Remember: The Nationals are just round the corner - time to get brewing
