Recipe Help - Milk Chocolate Oatmeal Stout

Hi Guys,

Recently had the White Hag - The White Sow Oatmeal Chocolate Milk Stout.
And have to say it's pretty tasty! So tasty infact I'm hoping to make something along the same line.
I've been looking at other recipes done by some members and mish-mashing what I could find into my own.

The recipe I had in my head was:


  • 1 can of Coopers Stout kit

  • 1kg Dark Spraymalt

  • 250g Lactose

  • 300g Carapils

  • 400g Porridge Oats

  • 250g Chocolate Grain

  • 200g Roasted Barley

  • 12g Golding Fuggles (Bulldog Brews finishing hops)

  • US-05 Yeast

And hoping to top it up to 21-22 litres.

One of the main queries I have is what to use to give it the chocolate taste.
Some recipes say to use Bournville, Cadburys drinking chocolate or a chocolate syrup.
Just wondering if anyone can provide insight as to what would give a subtle chocolate flavour?
And if that recipe doesn't make sense let me know, still a noob to this.

Thanks for that guys.
You put me in the right direction.
They add 500g of the Green and Blacks to 2100 litres, so about 5g in 19 litres.

Hi all,

Went with the recipe above and it's just hit the two week mark so going to dryhop now for about 3 days (24g of Fuggles/EKG).
At the moment it's very bitter and not getting any sweetness at all from the lactose.
Just wondering if it should be sweet at this state or does that come out while it's conditioning in the bottle?
At this stage would it be alright to mix up 100g of lactose and add it with the hops or am I talking complete nonsense?

Any advice/admonishment is appreciated!

Once fermentation is complete you can then back sweeten it to taste with lactose. Boil up some water with the lactose, chill it down and add to taste.

5g of coco powder in 5 gallon. Whats the point?

The thread you have linked above says 300g of cocoa for a 19l batch.
Everyone has to believe in something, I believe I'll have another drink...

Someone mentions in that thread to use 300g but Hopbomb came back on the second last page and said that 5g was what it would be for a scaled down homebrew batch (

) and mentioned that on a homebrew scale it would seem miniscule but if we wanted to clone the recipe that was the amount. So just following the recipe that was given. I did err on the side of caution though and add 15g so not sure if that will make an impact on flavour, but I'll probably experiment with this again and will update the thread as I go.
