While googling about on the esters in wheat beer, I came across this interesting presentation on wheat beer fermentation from the Master Brewers Assoc of America, www.mbaa.com/districts/MidSouth/Events/Documents/2010-03-13Wheat_Beer_Yeast__Fermentation2.pdf, highly informative, particularly keen to try a (somewhat!) open ferment which is it says helps increase ester production, I think a loose lid will suffice.

Edit: With the mention of not only an open ferment but also a shallow depth ferment, I twigged I could use a 35l storage box which I picked up in a eurosaver shop, perfect dimensions. Just have to secure the wheels to stop it rolling off the brew table!
