I have a berliner weisse force carbing at the moment aiming for 3 volumes of co2, a weiss beer in the fermenter and a pale ale planned for this week.
The first two could obviously be carbed the same but I'm wondering has anybody found a happy medium that suits both American pale ales and Weiss beers. Brewing a few beers for a wedding, nothing serious, just a nice add on to the commercial taps we'll have available so not relying on them or anything.

Contemplating a cream ale too, never had one but James Spencer keeps bringing up rave reviews of his recipe on Basic Brewing Radio so I'd love to try it. Anybody ever brewed one of these?

I am just after doing a nice cream ale and its bottle conditioning at the moment.

2.8 pale malt
1.2 Vienna
230g corn maize
230 flaked rice
21g Willamette @ 60 Min
5g magnum @ 60
9g Willamette at 15
9g Willamette at 5

Mangrove Jack's m54 California at 19 degrees 6 days primary, 7 days secondary
If you want a bit of hop flavour dry hop with 28g cascade @ 5 days into secondary, I forgot to dry hop.

First impressions are good, clean tasting  even the missus likes this one
