Mangrove Jacks M54 and WLP830

Another Brewcon goodie to be used, not so much of a shootout but more to see flavour profile from what is essentially an ale yeast and in spite of all the talk about MJ yeasts I've never used them as normally a liquid man myself.

Recent discussions about not pitching into anything above 1050 (my bloody lager OG ended up at 1058 because of that Hook Head lager Malt) the volume was sub 20L and I gave it the best possible start oxygenating the wort and then pitching rehydrated yeast something I don't normally do.
Set at 18 Degrees (18-20 rec) as I want a long  slower ferment 12 Hours in big krausen now and bubbling away nicely.

Taste test in 2 or 3 weeks time, but initial look and smell is good.

I really like m54, it is very clean. Beer is hazy but a cold crash and gelatine will sort it out.  I have used on 21 at 1056 and it finished out in 7 days as far as I can remember.
Be interested to see what you think.

The MJ looks like its nearly finished after 5 days, the 830 wil be another 2 1/2 months ;D

Toying with the idea of using M54 on an APA, would you foresee any issues?

Not sure how good it would be for a competition beer as I would probably finish very clean?. Don't really know tbh as first time using it but its definitely top fermenting. I'll update next week when shes finished fermenting and I've crash cooled.

CH on my last few brews with m54 the krausen formed an elastic character.  I would recommend that you skim this off a day or so before you rack it.

I normally crash then "fine" and the take from the middle leaving at least 2 inches on top and bottom which easily fills a keg.
Especially with this guy as it's going to be aged in steel a couple of months and I don't want anything coming across. What I will say was there was a full 3 degrees from exothermic fermentation at top of the vessel 19.9, vs my set and I had to drop.

Bloody Hell 5 Days and shes done, candidate yeast for "Boy Racer" beer ???
Definitely approaching a bock variant at 6.6%!
Crash cool and gelatin next couple of days, I'll do a before and after pic.

Very clean and easy drinking but definitely not a pilsner as it has a slightly malty "rich tea" ale profile and ticks every blonde ale bjcp box.
I asked the expert and she said it tastes like "beer"
She will regularly drink my pilsners but this one was too "beery" for her.

I think the conclusion is if I was looking for a quick clean easy drinking blonde ale this yeast is ideal, also in its favour is speed of fermentation.

I'll post about its Pilsner brother in 3 months time

It's force carbed with a carbonation cap but 10 days, includes 3 days gelatin treatment
I could brew this beer in 5 days, it's still a little green and unbalanced and tastes like some commercial blonde Irish ales I've had and in another 4 weeks conditioning in a keg it will be so much better.

Czech pils to me isn't all that crisp (German lager is though) and has a touch  of that rich tea that you mention so if I had that a Czech pils I'd probably really like it.

Very hard to put a full descriptive on what I tasted but Czech pils to me definitely has a  mix of hops and malt on the nose but there is more balance through the taste and have no malty lingering profile on the end, this is definitely more malt based on the finish and why I believe it's in the Blonde Ale direction.
I'll have to send in a bottle to the BJCP judges
