I'm interested in the Beer Gun for bottling beer that I don't need to bottle-condition - maybe this one http://www.homebrewwest.ie/bottle-filler-beergun-with-accessory-kit-2175-p.asp

I have a 5kg CO2 fire extinguisher, and hear that the lad in Bray can fill it for me. What other fittings do I need to mate a CO2 fire extinguisher to a beer gun ? Or .. maybe even normal keg regulators.

For liquids. These connect to a basic screw type quick disconnect that pushes onto the the end of the gun.
Gas is much the same. There's a screw connection into the gun that you run a gas line to for purging the bottles.
