Ciderhead

Council Regulation (EC) No 1493/1999 of 17 May 1999 specifically Annex 4 and 5 refer to post fermentation modification.

The attached is pretty interesting on distillation and talks about Congelation which I guess is the official term in the industry.
Interesting that the process is used in less that 2% of world production because of the associated dangers, I bet thats Russia ;D

What sort of levels of fusel alcohols, esters, acetaldehydes, etc would you expect to find in a cider as compared to a beer?  I know the effect that fermentation temperature, pitching rates, yeast strain etc has on formation of these off-flavours for beer is well documented, but I don't know if these have the same impact on cider or not - can anyone recommend some good reading on this or have any experience from their own batches?
