I'll ask the obvious question:

"What is a quad"??

As in Belgian Quadrupple?

As in 4 beers in one day?

Ozzy Osbourne breaking his neck on a Quad Bike?

If we know what you mean you may get a reply!!

hah! yes, a belgian quad

Get a bloody good crop of yeast and keep it simple. Not too much sugar but the yeast is the key. Rochefort is the biz. Chimay less so but will eat anything. 90%+ pils, cara + sugar I'd say.

This book is worth a look. Good read. http://www.brewlikeamonk.com/

rossa, thx!!

have the book and had forgotten about the recipes in it!  until i had 3 philosophers other day and was reminded they talked about that in the book- will give it a bash soon i think! got chimay and westmalle yeasts harvested. they are both monsters!!

thanks again
