2014 Apple Juice group buy?

Silly question time, but I assume with this, it's a case of it's picked up on the day, then same day members coordinate to pickup from their local club and brew within the next 24/48 hours?

Never done a cider before - quite excited to give this a go now! About the only thing I know is I don't want it to be cloyingly sweet.
Fermenting: IPA, Lambic, Mead
Conditioning: Lambic, Cider, RIS, Ole Ale, Saison
On Tap: IPA, Helles, Best Bitter

We just cracked our first of last yrs bottles. Reasonably dry cider lots of fruity aroma and flavour is very good. This was a batch let go on its own wild yeasts and worked out well.

same as, got a few left from 50L, have done an Aldi/Lidl batch since plus got 10L of Lithuanian Aj that i bottled mid july

A couple of points to consider:

The fresh AJ is good for more than a few days. It does not have to be processed in 24 hours or less.

If you just leave it as it is and replace the screwcap with an air-lock it will self ferment using natural yeasts
About half of the last GB was fermented like this.

Option 2 is to use campbden tablets (amount depends on the pH) to suppress the wild yeasts and pitch a yeast of choice.
