Bottle conditioning DIPA

So i have a DIPA (Smells great) problem is it about 10% and it seems the SO4 could'nt cope. I prime the bottles with Carbo drops originally  I tried re-pitching a so4 slurry but still no joy. I've read the beers this high need time and id be fine with that but the IPA comp is the end of the month so needs must. Today i got some champagne yeast and i did a small slurry and added it to 4 bottles. Im hoping it should do the trick with out messing up the flavor. My one concern would be that it would make it to dry. i will keep ya posted.

I bottled my DIPA this weekend too and I feel like shouting at it "Hurry up and Carb you bolloxes"
But anyway, there's no point in you submitting yours because mine is the gold winner!

Feel sorry for the Judges.....they'll have to stay on the DIPA's after the comp because everything else will taste like piss

Mine is conditioning, but slowly, which is to be expected. I only hope that it's just slow, and not crapped out! I do have some kegged, so could always beergun some. I might actually beergun the whole keg, as might be too dangerous on tap!

Ha, how about a bottle swap tomorrow night? Or at least a small sample. The kegged portion should be carbed at this stage.
