Hello from Carlow (Noobie)

Hi everyone. Total noobie. Very interested in getting from kit stage to all grain. I'm on my second kit now, I'll probably do one or two more but try to hack them with maybe some of your help!

Thanks man. I'd like to ask one question alright.

My first brew, Evil Dog IPA, is bottle conditioning at the moment. I conditioned at about 21c for 10 days then a week in the fridge.

When I opened it, I got a cidery smell and taste.

After reading, I realise it's acetaldehyde, and realise I need to leave the bottles condition for longer to allow the yeast convert the sugar fully into ethanol.

Question is, do I leave em in the cold or the warm?

Leave them at room temp and they should sort themselves out. Taste one every week till they're good.

We pretty much brew all  de time just touch base when ur free.

It's hard to get group together as we come from a wide area of the country.

Just pop over arrange time with bren but be prepared to be amazed at the beer samples on offer it will make you want to commit big time ! It's addictive this hobby
