True Batch Brew Porter

Bottled the porter today. About 20 days in the demijohn and only stopped fermenting yesterday. SG was 1020 far as I remember (scribbled it down somewhere... can't find it...)

Had a drink of the dregs of the bottling bucket and by christ was it sweet! Now, maybe that was a fair dose of the sugary-beery priming syrup and the rest of it is not so bad. We'll see sure!

Well after nearly 4 weeks in the bottle I've braved sampling my malformed porter. Surprisingly not bad... Well, maybe it is bad but I'll drink it anyway! I've definitely had worse beers from professional-brewers-who-should-know-better.

It's sweet and tends to gush out of the bottle so I lost nearly half of the first bottle to the floor (and the curious dog...) but it's sufficiently porter-like to make me want to try brewing it again, this time without making a balls of the mash.

Seems like you might have a few bottle bombs building up. If they are gushers then take them to the sink and gently attempt to open the caps to let the excess gas out. it will help. :)

Oh yeah? Shite, sounds ominous...

They've crown caps though so should I just re-cap them all or would that let in/out too much gas? It's a small batch so there's only about 8 or 9 of them left so it wouldn't take long to re-cap

No just gently pry at the cap without removing it and you will let some of the excess gas out. :)

Seems like you might have bottled them a bit early. Give it an extra week next time just to be sure.

I had a Wheat beer recently that were gushy.
I Pried the cap as Dempsey said to relieve pressure, I also used a capper to resqueeze the cap.
