Nottingham Ale Danstar 73-77% Medium to High 14-21°C Medium The Nottingham strain was selected for its highly flocculant (precipitating) and relatively full attenuation (transforming sugar into alcohol) properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for an ale yeast, allowing the full natural flavor of malt to develop. Good tolerance to low fermentation temperatures, 14°C (57°F), allow this strain to brew lager-style beer.
BRY-97 American West Coast Danstar 74-76% Medium 18-21°C Medium BRY-97 American West Coast Yeast was selected from the Siebel Institute Culture Collection and is used by a number of commercial breweries to produce different types of ale. Quick start and vigorous fermentation, which can be completed in 4 days above 17 °C. The aroma is slightly estery, almost neutral and does not display malodours when properly handled. It may tend, because of flocculation, to slightly reduce hop bitter levels
Windsor Ale Danstar 73-75% Medium 17-21°C Medium This yeast produces a beer which is estery to both palate and nose with a slight fresh yeasty flavor. These are usually described as full-bodied, fruity English ales. Depending on the substrate, the Windsor demonstrates moderate attenuation which will leave a relatively high gravity (density).

Safale S-04 Yeast Fermentis 70-75% High 15-24°C Medium A well-known, commercial English ale yeast, selected for its fast fermentation character and its ability to form a very compact sediment at the end of the fermentation, helping to improve beer clarity. This yeast is recommended for the production of a large range of ale beers and is specially well adapted to cask-conditioned ales and fermentation in cylindro-conical tanks.
Safale US-05 Yeast Fermentis 81% Low to Medium 15-24°C Medium A ready-to-pitch dry American ale yeast. Safale US-05 produces well balanced beers with low diacetyl and a very clean, crisp end palate.
M44 US West Coast Mangrove Jack’s High High 18-23°C A top fermenting ale strain suitable for American style ales. This yeast produces an exceptionally clean flavour, ideal for when you want the hop character to really punch through. Suitable for American style pale ale, American double IPA, American style imperial stout and more.
M07 British Ale Mangrove Jack’s High Very High 16-22°C A top-fermenting ale strain suitable or many types of ales of all strengths. This strain products light and delicate fruity esters and does not strip away malt character or body. Suitable for ordinary bitter, extra special bitter, golden ale.
M03 UK Dark Ale Yeast Mangrove Jack’s Medium Medium 18-22°C A top fermenting ale yeast suitable for a variety of hearty British ales, promoting exceptional body and flavour. Ferments with full, rich dark fruit flavours. Suitable for dark mild ale, English brown ale, Scottish heavy ale.
M10 Workhorse Yeast Mangrove Jack’s High Medium Lager styles at 15-20°C,all other beer styles at 20-32°C A top fermenting yeast which produces a clean, crisp flavour suitable for a wide variety of styles with different fermenting temperatures.
