Title: Brew Quantity and When

So we have all committed to pay! Great!

Jacob has just sent me a PM about should he do a double brew?

Assuming all 8 of us can brew 20 or so litres then a spare from Jacob will not go amiss.

Is any one NOT intending to brew?

Once this is in the fermenter I have a Brown Porter to brew also a Rauch bier so no problem with a bit of a late top up! More important is to taste the brews before they go into cask!!

However given our huge skill base in the NCB no need to worry on that score!

When do we need to have brewed by?  Rather than asking when we might brew, we should have a planned date to be ready for.  That would be the kick up the @rse I would need.

For me Moday is MAsh day!!

As someoneone on another forum mentioned "What are we going to call our cask".

Any ideas?

What was that book set in the middles ages were they used to brew a magical dark bok weissen and mature it in a massive bottemless cask placed over the grave of an Irish hero?

Well - just finished up ...

smells lovely -

ended up with 24l (probably lose 1-2 of trub)

but am 100% good for 22l.

My efficency was poor - ended up with 1082 rather than 1090 (63% rather than 68%)

so my beer will be abnout 8%

Those of us still to brew should lower are efficiency. Jacob has already mentioned he's usually a few point short.
I'm going to set my efficiency at around 63 better slightly over than under.
Jacob and nigel can you let us know how you got on efficiency wise.

Set your efficiency to 63% is a good call - if you get it stronger - it will help

You might have to add a little brewing sugar if your mashtun is overloaded - 400g is ok

I should have done that to be honest.

Was expecting to get lower but not as low. Had to add 0.75kg of muscavado sugar to 'pimp' it back to 1.089.

24L into the bucket. Efficacy was a bit low as well so I added the last 500g of dme from the 3Kg bag i got to bring it up to 1.088. If i had hit my 23L mark i reckon it would have been bang on.

Got my mash on,max'ed out my 33 litre mash tun with 9kg grain.i'm going to mash for 1 and a half hours to help efficiency.I've never added sugar to bring up the OG,do ya just check the gravity after boil and keep ajusting.

Did anyone check pre-boil gravity and also what was your estimated pre-boil gravity if your software give it.
Beersmith gave me an est pre-boil of 1.072 and i measured 76 and thats with out adding any sugar.
not boiling til tomorrow but looks like i might be over 1.089

Took a reading of my yeast from the previous batch - its attenuation is about 78%

its bubbling like crazy already (and I am keeping it at 18C) - started bubbling about 3 hours after pitching.

So.. that basically means my TG will be 1018 rather than 1025 - so it gives me 7 points on the other side.

Im at 8.6% now if everything holds true

- but I am paying with a little less body on the beer.

Brewed mine yesterday too.  Talk about pressure!
I has affected by low efficiency so hit 1.084.  Thought about adding some sugar but didn't in the end.
Should end up with 23L at 8%.
Is there any point adding the sugar into secondary?

I think you have missed the boat on that sugar addition - but I think your fine

- there are 8 brews - if the average is 8.6 rather than 9 - I don't think it makes much difference (IMO)

So this is what I brewed:

So at present I intend to follow the original recipe:

Ingredients:
2500 g Pale Ale Malt
3000 g Light Liquid Malt Extract
1000 g Wheat Malt
500 g Chocolate Malt
500 g Crystal
500 g Roast Barley
500 g Barley Flaked
60 g Magnum (??%) - Upped a bit as mine was not fresh! added during boil, boiled 60 min
200 ml thick trub from IPA

Mashed @ 68C for 90 mins

60 Min Boil, Cooled Pitched at 22C will drop dow to 18 to 22 after 24 hours

Got 24 Litres at 1090  :) :) :)

Don't add any water. What temp was the sample in your hydrometer. Temp will change your results so you may be bang on just not recording sample at the right temp.

187 /4.55 = 41.1 Gallons

Assuming we allow say 1 liter of trub? ( remember in secondary we need the yeasties to do there thing then we may be a litre or two short!

Recommendations:

1. Top up with plain boiled water

2. Top up with a sterile DME wort

3. Top up with our next brews ( I am brewing a brown porter )

4. Buy a few cans of G/B/M and bung them in

I think that once full we will loose little to evaporationion

But at least we have all brewed - Yet another first for the NCBers

Casks are looking great - gentle turning and rolling to keep them wet!

Maybe 5 or 10 litres.

Its difficult to say exactly as we have to factor in trub loss when we move from Primary to Secondary to Cask and also the exact size of the cask! I think we fill on the day, if someone can have a few gallons or spare as back then I don't think there will be a problem.

Also as soon as we fill it it will start to ferment a bit more as the oxygen addition caused by the racking will give the yeasts a boost - so it could probably be topped up the next day or so.

This is the beauty of doing Big brews they are more resistant to change than small brews.

Is it a standard US bourbon barrel?  190-200L?  I've just been doing some googling.

If we have 187 and each of us loses 1-2L in trub/miscalculations etc. we might end up with about 175ish.

Do we need a volunteer to do another 20L to be safe?

As I mentioned earlier I am doing a Brown Porter next.

That would be available.

I am out of Stout specialities at the moment.

At worst on the day we could just knock up a kit.

I like the idea of keeping a gentle sloooow fermentation going for at least the first 3 or 4 months

Any ideas - anyone wnats to become number 9 in the project?

I'm back from holidays which was the reason I didn't commit to the brew in the first place. But if you're short beer I was planning a brew this weekend... What do you reckon? Won't have all the ingredients to hand though....

I say go for it.  If you can brew something in the ball park, that would be great.
I have a few bits left over that I could donate to the cause. 
What you really need to hand I think is some DME to help make sure you increase the OG.
Tell us what you're short of and maybe we could all chip in?

OK... So if I take the recipe from Jacob's original post I've everything except flaked barley and roasted barley. What colour crystal did you all use (I've loads btw)?

Can anyone help me out on the flaked and roast barley so that I can brew tomorrow?  ;D
Did everyone do a single 60 min magnum addition?

For future reference toy can pick up flaked barley in most health food shops. The likes of holland and Barrett do it and if you time it right they do specials. I picked up 500g of flaked rye of about €1.40 and got another 500g for 1c. Worth a look.

So after 5 days of vigorous fermentation at 22 C gravity is now at 1.030

So its dropped 60 points so is now at 7.9% abv  :)

Will give it a few more days then rack into secondary.

What would be the ideal secondary temperature?

For most of time it was at 18C. Now thermometer is showing 20c.

Brewed today. Took my time and have just finished cleaning up now (I made quite a mess....). Didn't get the massive gravities most you guys did. Probably could have boiled for longer but I wanted to get 23L into the fermenter. Everything went well  :)

Well done to all of us!

Here's the stats:

We have 210 litres in primary at an average of 1.086

We should only loose a litre if we are careful going into secondary and less than that going into the cask.

If we drop 65 points then we should be about 8.6% Spot on I'd say

My beer I still in the early days of vigorous fermentation. Even though the room it's in is cool the temp of the beer went up to nearly 24c by itself. I've got it sitting in cool water now with a wet towel around it. So it's back under control. I've not brewed a beer this big before. It really is something else.

My is only calming down now - as in - blowoff no longer required. There is still about 3 inches of yeast on top.
I will dial it up to 19 now.
I was keeping it at 17 using a freezer.

Im new to these high gravity beers.

Gravity is down to 1.022 and tastes unbelievable. Its gonna be hard handing it over for 6 months  :(

Mine slowed right down today. Still fermenting though and still a raised airlock. But do you reckon that after three days that's sooner than ideal? I've not brewed a high gravity beer like this before. I'm wondering if it was too warm at the start and fermented too quickly? Any thoughts? I'm certainly not worried or even tempted to take a sample. Just wondering...

Your yeast on the bottom may be shot or one of Wills "Super Mutants" 7 legs, 4 arms etc  :o, best to start with fresh packet.

Ok I messed up with my refractometer reading.it was my first time using it. I knew their was calculators to tell SG from brix but as my refractometer gives a SG reading I thought their didn't need to be any other adjustment. So that's where I got 1.043.
Anyway hydrometer reading SG 1.090 and FG 1.016 beersmith gives me 9.8 abv
Beersmith refractometer calculator using hydrometer SG and refractometer FG gives me a FG 1.014
and 10.14 abv
Will have a sample of it with me tomorrow

Mine down to 1.020 a few days ago, so should be ready for secondary now. Down from 1.084.  Really roasty with a nice bitterness, can't taste the alcohol at all.

I'm getting way ahead of myself talking about the bottling but I did see this on The Mad Fermentationst Blog. It might be useful come the time.

Priming calculators assume that there is already a fair amount of CO2 in a beer even before priming (~.8 volumes, depending on the temperature). Pro-brewers have meters that allow them to measure the amount of CO2 in a fermented beer, and many will force in some carbonation to get the young beer part way before getting the last bit from bottle conditioning.

    It doesn't take much yeast to adequately repitch, just a gram or two in five gallons, rehydrated in warm/sterile water, and then stirred in with the priming sugar. Luckily wine yeast isn't good at fermenting complex sugars, so as long as primary fermentation finished as a result of nothing for the ale yeast to eat and not too much alcohol, you'll be fine.

Mine will be in a 5 gallon pressure barrel with a solid cap for the trip.

A corney would be no problem

People from Tog brew days have driven home with 5g in a 32 L fermeter with an airlock - Teaches fuel efficient driving!

i.e. Drive carefully, don't be agressive, no hard braking or acceleration else the car smells like a brewery for weeks

I chilled mine to 30 whilst ringing a taxi and brought glass carboy back home along with all equipment and a sealed up small beer. Unloaded taxi, pitched yeast.
My driver was excellent though-turns out his mate homebrews and was talking about us, so very safe driving!

I'm back from holidays but it is the 8th we agreed on.
I'm available for the whole day but I think the plan was to arrive at about 12 onwards.
Weather permitting I'll throw a few snags on the barbie for lunch.
I tidied up the garage a bit last night and have a pallet in place in the darkest corner. Another pallet on top of that should lift it up enough.  I'll PM directions in the next few days to those on the list.

Will_D, can you bring some decent sized syphon tubing to speed up the transfer?  All mine is too small. 
Also, James you mentioned that you might bring a pump, I think that would make life very easy for us. 
This would allow me do less work and drink more beer!  Looks like it's going to be another hot one on Saturday, need to stay hydrated!

Good News - Collected the pump last night

I have some very long (4-5 meters) tubing with the pump - so we are good to go.

What I was thinking - was to make 5 litres of star san and pump that round the pump / pipes for 10 minutes - a CIP (Clean in Place) effort.

Do you have CO2 ? Probably a good idea to flush the barrel

I need to get up early - have to be home by four - so I might leave the pump with you and you can return it to me Tuesday at the meetup.

Yes I have some CO2 left in my cylinder (not sure how much - though it's reading much higher now with the warm weather).  I've a full cylinder of mixed gas 50/50. so if anyone has a regulator for it we could use that either? 
I have starsan too, was planning on making up 10 - 20L of the stuff for general sanitising anyway.

Thats Grand - I dont think you will need too much to flush the barrel - Just enough to cover the bottom (as Co2 is heavier than air) and prevent the beer touching too much air.
