Here's a nice simple and extremely tasty orange hefeweizen recipe for the Coopers Wheatbeer kit.
1 can Coopers Wheat Beer
1kg Wheat DME
300g carapils (for a better head)
300g dextrose (for a beter bang)
rind of 2 valencia oranges
half teaspoon of dried ground coriander seed
WB06 yeast (verrrry important! kit comes with ale yeast)
Steep carapils in about 2L water @ 65-70C for 30 mins.
Strain, bring liquid to the boil, add orange and coriander.
Boil for 10 minutes.
Put DME and dex in FV.
Strain orangey goodness into fv and swirl 'til disolved.
Add kit can and stir/swirl until its also disolved.
Top with cold water to 23L
week1 - ferment warm at 22-24C.
week2 - 16-18C
Bottle straight from primary, no need to clear.
Prime at 7g/L
This can be enjoyed pretty young but best between 1 to 3 months.

Yep i will do that ciderhead but the gear is not shipping until tomorrow so i reckon Monday at the earliest for getting it ? You made the right decision with the Irish Stout, I prefer it by far to their other stout.

Any sweet orange is fine, just not those stupid little baby oranges...
Get the rind off with a fine grater and try to only get the orange bits, none of the white.

Put this on tonight - differences being no carapils, and 500g instead of 300g dextrose. Looking forward to it. Lovely smell from the orange rind going in the fermenter. First time using a non-kit yeast too, very exciting!

If you're anything like me you'll be giving the airlock a good sniffing every time you pass it.
Not like the lager yeast I have on the go at the moment. I opened up the brewfridge about 10 minutes and the eggy stink is still lingering around...
Put one of these on yesterday, my god that wb-06 starts off insanely quick it was bubbling away after less than five hours. Mine however doesn't have such a nice smell rotten eggs galore but I'm guessing that's from the really quick fermentation it seems to be doing. But it looks good and sounds even better mucho thanks for the recipe lord.
Only difference I added 500g light DME instead of dextrose.
weird, i've never had this smell like rotten eggs. I normally only get that off lager yeasts.

I got a horrible rotten eggs smell from a starter of WLP001 Califonia Ale. Was afraid of using it at all but the internet assured me it was grand. Turned out fine in the end up anyway.
Yea this is the first time i've gotten a weird smell, everything looks ok. I'm guessing the super fast start might have something to do with it.

OK.. What's going on with my shocktop?! :) ... just done this one, wasn't going to bother with a gravity reading but did one just before pitching, getting 1082!!! Double checked the recipe just to see if I'd misread something but I haven't... The only variation was 250g of carapils instead of 300g as I just didn't have enough.
Was thinking some glob of extra concentrated wort must have gone through to the trial jar and is skewing the reading? Something must have happened to put it that high.... Otherwise I'm going to be steaming drinking this one.... What does it finish out at? The wort was well mixed as I was topping up with cold water so I'm doubtful it's for that reason, but can't think what else it might be. Temp is fine by the way 21C.
If you followed the recipe it's either a 'glob of extra concentrated wort' or your hydrometer is wrong.
put your hydrometer in 20 water and it should read 1.000, even if it is off it is unlikely to be that much off.
The recipe should be somewhere around 1.044 OG and 1.010FG :)
It just has to be 'a glob' (Will be sending that in for entry in to next years dictionary :) ), couldn't be anything else, funny it's never happened before, I've never even read about it happening... and the wort was well mixed.. surprising but it must be that.....

Yeah, it was entered into last yeat's competition as an orange witbier and one of the notes was that it was slightly dark for a wit.
It's the price you pay for the convenience of kit hacking.
Still scored 41, and I couldn't give a damn what colour it is ;)

With regard to priming? was going to batch prime, how many grams per liter?

it doesnt need any extra time in the FV. Once it's fermented out and not looking like muck you're good to bottle.

Sorry for reviving such an old thread!
I figured I'd give this recipe a shot, but I couldn't get my hands on any wheat DME for this brew. All I could get at the time of doing it during the week was Munton's extra light spray malt. It's been three days now and it's already hit what you said for the FG, but that may be because I used Mangrove Jack's wheat beer yeast instead, as I had it lying around anyway and I've gotten good results from it.
How much d'you reckon the extra light spray malt and different yeast would effect the end product? This is my first attempt at anything besides what just comes with a kit.
Yours mightn't have the same taste as the ratio between wheat and malt (dme/lme) is a small bit in favour of the malt, but wheat beers get a lot of their flavour from the yeast so using a wheat beer yeast should help. But in the end it's how it tastes from the bottle. I'd maybe leave it in the fermenter for another few days, to make sure it's completely finished fermenting. It's a really nice combination the orange and wheatbeer.
Put this on last night, followed LordEoin's recipe pretty much exactly so very excited to see how it turns out. It's in the basement tipping away with a heat belt and STC1000 set to 23 Degrees now. I'll be dropping the temperature as per the recipe in a week.

Good man, I got the ingredients delivered yesterday, both my F/V are on the go for next two weeks though, so wont be starting it for a bit yet, How did you ever get on with your lightning strike summer ale ??

@Rob - the lightning strike worked out really great - updated that in the other post. Delicious IMHO. Had one last night when brewing up this and shared a few out last weekend. tis delicious.
First week in the fermenter almost over and my basement smells delicious! I'll be reducing the temperature to LE's recommendations tomorrow and then bottling some evening next week. I have a queue of people wanting to try this out. Seems I have a lot of Weissbier fan friends!
Can't wait myself. Hoping to free up an f/v this weekend so might get my one on if lucky

I've made this one twice now. The first time was a year ago and was my first kit hack. Its been my favorite by far. Thanks for the recipe.
I used the Brewferm Blanche yeast instead, sweet orange peel and also used Saaz hops.
For a first effort it went quite well especially considering the number of rookie mistakes I made. Like:
- Pitching temp too high (too much boiled water, didn't use a bath to cool it)
- Over carbed the bottles (no bombs but really fizzy)
- Boiled the adjuncts separate from the wort. (not full flavor extraction)
My second effort is in the FV and will be ready to bottle by the weekend.
I avoided my previous mistakes, steeped some Abbey Malt and bumped up the fermentables this time round. The samples I took when checking the gravity are shaping up nicely.
Can't wait to start drinking it.
Some day Shocktop will make it over here and you'll all be like "WTF is this shite? I was expecting it to be as good as the kit-hack!!" ;D
I plan to bottle this tonight, it's just finished its week at 16-18 degrees so all going well i'll have it bottled up this evening and then move on to an APA recipe.

You can get Blue Moon in most shops now which is along the same lines as this recipe.... my first reaction was "Good but... I preferred my own"
the normal blue moon has little flavor.
if i remember correctly they had a version with bumped up orange and coriander, but it was still pretty weak.
but any of those special versions that i've found here are too old and have lost their freshness or balance

I've had the draught version of Blue Moon in America... its a step or 2 above what is arriving in Ireland in bottles. As you say, this style of beer is best drunk young. If it sits around too long I guess the more delicate orange and coriander flavors start to break down.
Good God were all gone mad for orange wheat beer. Got mine on Saturday. Took off quick too gonna have some collection to start on in a few weeks I just bottled two brews in last 4 days nearly 80 bottles in various spots about the house carbing up the missus is not best pleased ,

Bottled this up last night. Had a sip from the end of the bucket and it was very good. I'll start into these in about 3 weeks, which is right in the middle of the summer holidays. Perfect timing!
yea !!, was wondering how long to let this brew sit once bottled usuall amout of time 2 week carb, 2 weeks condition ? my batch only on since saturday so its got a week to go yet, did you batch prime in the f/v ?? or bottle prime ?

Bottled my batch last Friday. Tasted spot on for this style of beer. Hope to start drinking this in mid-July.
Sediment is a little thicker at the bottom of the bottles. The yeast did not seem to drop out of suspension in the FV this time.
I used Brewferm Blanche which is listed as a low flocculation yeast so a bit more yeast was expected in the bottles. What's the best way to get this yeast to settle out - cold crashing, secondary FV?
started into this earlier in the week (mainly because I ran out of summer ale). A bit young at only two weeks in the bottle but still tasty......hopefully i'll have some left to try it when it is properly conditioned!
Cracked open my first bottle last night to "test" it. Already I'm seeing (er tasting) a big improvement over my first effort even at this early stage of conditioning. I don't see this batch lasting very long especially since a lot of people who sampled last years effort are looking to sample this years. :)
I expect I may be making it again rather soon.

Well, almost the entire batch of this has disappeared....... very tasty brew.
The only thing is that I'm getting very little head retention, essentially none by the time I am half way through a 500ml bottle.

Could the 300g of Carapils in this recipe be substituted with 300g of Crystal Malt instead? I'm planning to order ingredients for a couple of brews and trying to 'combine and save' as much as possible!
Yup, but the darker the crystal the darker the resulting beer.

light crystal will do pretty much the same thing as carapils :)
I have the Craft Range Wheat in the FV at the moment. Do you think harvesting the yeast from the FV would be a viable alternative to using the WB06? It's labelled as a wheat yeast, and judging from a gravity sample taste, its doing a great job!

Careful with light crystals as well as they can make the beer very sweet. The yeast is harvestable but not sure what type is with the craft range wheat myself.
The craft range yeast should be fine to wash and reuse.
It's easy, just make sure everything's properly sanitized

I have this Brewing at the Mo...I modified the recipe slightly so that I would get a second batch in with the 1kg bags of ingredients (Carpils & Dextrose)...
If you were to do it again, which I am going to do, could you recommend a Yeast...I'd like to do a "Compare & Contrast" by JUST changing the yeast.

You could also wash and step up the yeast from the bottom of a few bottles of wheat beer like schneider weiss aventinus (http://www.beeradvocate.com/beer/profile/72/224/) for example
The problem with this kit's yeast is that it's just a plain clean fermenting ale yeast, similar to US05, so replacing it with any hefe yeast turns it from a fairly bland wheat ale to a lovely hefe :)

Harvested my yeast from the Craft Wheat yesterday. I'm going full on lazy - just decanted it into a sterile (autoclaved) bottle and am planning on lobbing it pretty much straight into the witbier wort without washing which some people suggest is OK if done reasonably soon (about 2 weeks for me). Hopefully I won't regret it! Also planning to do the Imperial Stout I mentioned above with Brewmaker stout, plus the Coopers Wheat yeast (which seems to be a clean ale yeast, with some suggestion it's actually S-05).
My batch of this had a good bit of time in the bottle to condition with being busy before my hols, being away for two weeks and too full of beer for another week when I got back, I have to admit I must have lost my palate for wheat beer with all the others I've been drinking not much of a fan of this to be honest, its taste fine and all its just not a flavour I'm too keen on, Will try another few bottles the weekend to see if I can be turned back. Also mine came out crystal clear !, Have I done something wrong ??

NOW THIS IS BAD NEWS. Sucks that it didn't turn out that good for you.....Sucks even more if you have just bottled 45 bottles and there is a further 21 litres in FV2....Arrrgggghhh. Did you brew with Coopers Wheat kit before??

The clarity and neutral flavor sounds like you fermented at about 20C
WB06 ferments fairly clean for a hefe yeast around that temp.
WB06 is a funny one. keep it out of its comfort zone and its more rewarding.

I put this on two nights ago. First time doing a proper kit hack and working with grains. Distinguished myself by.........forgetting to crush the Carapils. :-[ :'( Let's hope some of that head enriching goodness got out anyway! Used my recycled yeast from the Craft Range Wheat (simply collected from the end of the FV and put in the fridge). Thought I was in trouble next day (yesterday) when there was no action so wrapped a foil blanket around the FV. Well, I got action - my first blowout (and that in a 33L FV)! Lid of the FV is covered in krausen internally as well. Thankfully it calmed down somewhat and was bubbling merrily this morning, but no need to change the airlock (and it seems to be impossible to get rid of the crud from the pervious airlock as I don't have a tiny brush). No banana smell though (at 23C), in stark contrast to the Craft Range Wheat.
Weird that you'd get banana from the original but not this if you're using the same yeast at the same temperature
There's a bit of banana now but not nearly as much. Temp is the same (more by accident than design TBH).
Down to 1.012 last night (4 days) so the yeast has been working hard. Still bubbling very slowly this morning. Can definitely get the "Blue Moon" taste, but it was a bit watery? No point in judging it this early though I guess! Colour is quite pale; definitely paler than my Craft Range Wheat.
Here's a strange one. In the four days since my post above, the gravity hasn't budged from 1.012. So, good to bottle tomorrow right? Weirdly, tbe airlock is still bubbling, albeit slowly (once every few minutes). As the gravity isn't changing, would I be right in supposing that this is a result of dissolved carbon dioxide being slowly released from the beer, and that it's OK to bottle?
yeah, you should be good if the gravity's not dropping any more :)

Went in to try their scotish larger which got a good right up in one of the papers. They had a range of single hop ales as well, spotted a cascade one and a mosiac one.
Bottled this up last night; went for a higher prime rate at 200g for the batch. 44 bottles. Some amount on crud in the FV! Will report back in a week or so.
Meant to update this. Nice, mild Blue Moon-ish taste. No head, but in fairness I did forget to crush the carapils! Mostly gone already!

By the way folks as probably none of you have had original Shocktop (cant get it here) the way they serve it is with a nice fat slice of orange floating in a frosted pint glass.
The mexicans seem to like throwing a good pinch of salt in there too, which actually is quite nice.
Might have to try the orange slice and salt now that this is ready ;)
I had this conditioning in 4 mini kegs and 2 bottles. Tried a bottle last week (2 weeks in the bottle) and it was kind of meeeh. Opened up the first keg last night (3 weeks in the keg) and wow I'm absolutely delighted with how it's gone. I like my wheats on the banana/clove side and this really delivers for me. My 3 friends who tasted with me said it reminded them of the Paulaner wheat they had at Oktoberfest Beag so I think that's a result!
Great result! Nice to have a batch of something tasty. The only challenge now is making it last ;)
