Hi everyone. Total noobie. Very interested in getting from kit stage to all grain. I'm on my second kit now, I'll probably do one or two more but try to hack them with maybe some of your help!

Thanks man. I'd like to ask one question alright.

My first brew, Evil Dog IPA, is bottle conditioning at the moment. I conditioned at about 21c for 10 days then a week in the fridge.

When I opened it, I got a cidery smell and taste.

After reading, I realise it's acetaldehyde, and realise I need to leave the bottles condition for longer to allow the yeast convert the sugar fully into ethanol.

Question is, do I leave em in the cold or the warm?

Leave them at room temp and they should sort themselves out. Taste one every week till they're good.

Ah great! Is there many home brewers in Carlow? Any meet-ups or clubs?

I'm in Castledermot not so far from Carlow.
South Kildare brewers have a super setup. Brenmurph is your contact if you ever want to pop over and say hi ! Plenty of samples also on offer  :P

It's hard to get group together as we come from a wide area of the country.

Just pop over arrange time with bren but be prepared to be amazed at the beer samples on offer it will make you want to commit big time ! It's addictive this hobby  :D

Sounds great. I'll pop over some Saturday if that's alright. I spend the weekdays rushing to and from Dublin from Carlow so weekend would work best for me

Brewin dis wknd.. Alreddy 5 allgrain dis week... But christmas is coming and we condition 5 to 8 weeks most beers

Bren would it be cool if I dropped in the weekend of 15 Nov? My friend from wicklow has just started brewing and Id say he'd like to join in.
