Coopers international Mexican Cereveza- kit hack

Alrite Guyz ,

So I have decided to step up my production and once my stout comes out of the FV I will be starting my next brew...

I did a muntons Mexican Cereveza but didn't really like the outcome so decided to go with coopers kit as I alwas been happy with the coopers kits end results .

I like corona with lemon or Lime and geared my kit hack towards this.
I be using fresh hops this very 1st time and could use a little help from you Guyz.

Ingredients bought
Coopers Mexican Cereveza
Carapils grain - 500g ( help me with head retention on the beer )
Citra hops 100g (pine with exotic spice reminiscent of grapefruit)
Sorachi Ace Hops 100g ( great citrus flavouring profile leaning towards lemon)
Mexican Cereveza Yeast
Light DME 1kg
Brewing Sugar 1kg

I haven't full decided on the exact recipe I be creating but am open to suggestions.

Was thinking using:
75g Sorachi Ace Hops
50g Citra hops
(Both hops boils for 15 min to get lots aroma and flavour and release only small amount bitterness)
500 g Carapils
700 DME
600 Brewing Sugar
Mexican Yeast + some of the Kit Yeats (possible half packed to help with ferm large amount sugar)

I hopin the hops with give this beer a great refreshing profile for summer months.

Haven't put it through software but that sounds like a lot of hops for a cerveza. I made this kit 6 years ago as my very first kit and it turned out really nice without adding anything extra to it. I would probably only use the citra as it does have tropical flavour, looking up the sorachi ace, it says it can give a lemon/bubblegum taste to the beer, which in my opinion wouldn't be what you're looking for. Maybe cut back on the carapils as well to around half. but each to their own

Found headretention very bad with most kits, I mite go with 300-400g carapils, can you maybe advise how strong it effects head retention ??

I completely understand u reckon it mite be a bit much hops but its my 1st time with hops nd wasn't sure how much flavour they impart...

From working with grain I found not a lot flavour was brewed out...

Not sure it said bubblegum anywhere on the description for Sorachi but def felt the combination of the two for tropical nd citrus & lemon flavour would be nice....

I like corona with slice lime nd the citrus taste it gives the beer...

On a different note the Mexicans actually used slice lime on top of the bottle to keep flies away

Anyway I guess this is the fun bout homebrewing ye get try something new ....

i made this kit a few times and my favorite was plain with just 500g DME brewed to 19L.
It's a pretty plain beer but it's refreshing and cerveza is supposed to be plain anyway..
but it's your beer, so put everything you like in it :)

Yeah I could end up creating or experiment with all kinds flavours.

I am a baker by trade nd ofcourse a lot is bout combining flavours while baking

I like to brake away from lot of the traditional beer flavours.
With the large amount flavours avail between grain nd hops I just can't resist to try something.
Ye never know I might create sumting new & gd or something awful haha

I always get other people to try the end result and their opinions.

Story Ladz, so started my new brew 😄.

Delighted can wait c how it turns out...

Some of the finer details..

350g carapils steeped for 30min between 70-80c
75g Sorachi Ace and 50g Citra hops boiled for 18min
500g light spray malt
850g Brewing sugar/dextrose
1 Tin Coopers kit Mexican Cereveza
1 white labs yeast Mexican Cereveza


I did the usual producer cleaned and sterilised my equipment nd FV
Steeped the grain nd then boiled my hops in different pot nd combined both liquids.
Added liquid to FV nd the added my spray malt ... Mixed everything till all disolved.
Added my brewing sugar nd topped up with 1 boiled kettle.
Added my coopers kit nd topped up too 23 Ltrs .
Pitched yeast at 23c nd put FV into a Ferm room

Took a OG reading at 1053

On a different note I had s visitor while making my brew while topping up nd they said they could smell der lemon nd possibly mangos wen they walked inn... I woz delighted cause hops def worked 😄

So 2wks Ferm at bout 13-15 C

I keep ye guyz updated 😄...

Just thought give quick update, I finnally noticed some fermentation happening...

Roughly 36h later after yeast had been pitched, pitched @ 23c nd I did not keep temp steady but let it drop to 14-16c depending time of day....

1st time using real lager yeast nd read up its normal for slow start but just thought I make quick update incase anybody plannin using this yeast .

Note : your cleanliness is extremely important at start I guess with such a long delay on ferm...
