Anyone got a good Wit recipe??

Anyone got a good (tried and tested) wit recipe... My equipment is 30 L and I usually end up with about 22L after fermentation and bottling... have done mostly IPA before, one porter.... mostly very good results...

Am hoping the Wit style will be even easier than IPA, and results nice and summery!!

I've done this a number of times and have gotten it very consistent. US-05 makes it more of an American Wit I suppose

3kg pale ale
2kg wheat
500g rolled oats
12L mash @ 67
13L mashout
90 min boil
Hallertau Trad 28g 90m
Whirlfloc 14 mins
12g crushed coriander 10 mins
Zest of 2 oranges 2 mins
O.g 1.054
Pitched US-05
Racked to bottling bucket onto 16g crushed coriander

Sounds super Simon, would definitely try that.

So just one small hop addition for bittering?

when you say "Racked to bottling bucket onto 16g crushed coriander" do you mean it goes into the fermentation vessel or secondary fermentation vessel? And is it literally "crushed" coriander, or ground?? would fresh work I wonder?

I've never used Whirlfloc before but am assuming it makes a difference...so will get some  :-\

It's coriander seeds BTW  :)

I put them in a bag and use a rolling pin on them.  When it says racking i mean into the secondary vessel or you could chuck them once fermentation has died down

There are a few dried yeasts that can do the job. Brew ferm Blanche is meant to be particularly good for wits, and the mangrove jack one has an interesting coconut aspect that can go well with them

cool stuff @TheSumOfAllBeers. But already have some US05 on the way from homebrew company, so will probably use that this time.

Think am actually keen on a clear beer for the first time ever so I will try the Whirlfloc for it. My impression of the Wit style is that it almost looks like a Lager and I like this about it. Not really a Lager or Wheat beer fan in general but Wit seems to come out on top so am hoping for the best!!  8)

Where do the bits come from Thomas?? the grain I presume...? or will there be a lot of floating matter to deal with from the other additions .....the whirlfloc clears them somehow?? :)

A bit of both, you'll likely get a few grain particles from the mash tun and then you'll have proteins, bits of hop and other gunk forming in the kettle. The whirlfloc clings to them and causes them to drop to the bottom of the kettle.

1 tablet is enough for 40-50 litres so I normally break mines in half and add with 10-15 minutes to go.

The US05 instead of wit yeast should mean the beer will drop clearer than a normal wit. If you want it to clear up more cold crash it by sticking it in the fridge for a day or 2 before you bottle.

Thanks a lot for the recipe, had great fun making it yesterday. It was bubbling away nicely when I woke up this am, so looking good, can't wait to taste.

Half a whirlfoc went in and quite a bit of orange zest/ pithless rind from two Navels... As well as 15g coriander seeds that were pulverised between kitchen towels in a bag using a meat hammer - good craic  ;D didn't do the racking bit with the coriander so hope the 12 min addition of a little extra will give it something of a hint/

Oh yeah original gravity was a little higher at 1060, according to Ronan's fancy hydrometing machine- name of which escapes me now

You'd do this after the vigorous part of fermentation has died down so in about a week or ten days. You can just chuck them in the fermenter or use a hop sock. Same idea as dry hopping. Should give more aroma than the boil portion. Not essential.
