Ciaran did give the malt bill for Dead Pony so i bet we'll all be trying to brew that next

Had a great day and hats off to the organisers. Great venue, great food and drink and an excellent line up of speakers. It was particularly good to see NHC members speaking professionally on a few topics as well.

Aside from the numbers adding up, what exactly do you think "20% Cara" means? Carapils? Caramalt? Just light crystal?

I also think that's a lot of very dark crystal for DPC.. Not that I'm suggesting they're intentionally misleading people, but I just don't see that recipe working on my system anyway.

But percentages of what basic weights. A lot of people say that they use x% of this to y% of that with a few 5 b's and c' added.

But they don't state a total weight is 7 kg for a 5 gallon brew!

Or am I missing something?

That's a good point actually, but I think you could get pretty close by taking the ABV into consideration. The ABV of PIPA is 5.6% I think, so tweak the grain bill to give that %, and you've got your basic weight, for a given volume.

Of course there's the added complication of brew house efficiency, but having a target ABV can be a help at least.

Once you know the Target ABV, pick your yeast, apply your attenuation and figure OG and FG.

Yeah, it would be excellent if the speakers would be willing to make their presentations available. A few of them had to speed up towards the end. It would be good to see what we missed!
