Gluten free beer.

I've got 5.5kg of buckwheat looking to brew a gluten free beer anyone got any tips on a recipe?

Lofty..if you pull this off keep me a bottle for a meet..ive a ceoliac friend who is dropping a fortune on one type of beer he can drink..the rest take like piss

Is it malted Buckwheat? It might not actually be gluten free depending on how it was milled
The forums on homebrewtalk have a section entirely for GF beer so you might have better luck there

Has he tried the Nigerian Guinness Foreign Extra Stout? It's brewed with sorghum rather than barley. I believe it's available in some of the African shops.

The buckwheat hasn't been milled at all I haven't got around to trying it yet but I'm aiming for this weekend

If you mill that in your regular grain mill it won't be gluten free anymore unfortunately.

fermenting - peach wheat, mango wheat

drinking - whiskey stout

That stuff will only make a gluten reduced beer. It depends how sensitive your friend is but being coeliac is no joke for a lot of people. You need to be real careful what you give him.

My celiac friend spent a good while at the RDS craft beer fest talking to all the breweries that had GF beer. They all used this (same with BrewDog too). She can't drink any of them

The problem you're going to have is that Buckwheat is quite a specific taste. Most GF beers use a blend of Buck, Sorghum, rice or millet to balance out the flavours...
