Planning to do a Hitachino Nest's Cone recipe in the next couple of weeks and wondered what Safale yeast would be best for this style (Belgian Wit)

WB-06 or S-33

I havent tried s33 but I really dont like wb06 for my wheats. I like a bit of bananna in my wheats and can never get a hint of it with wb06.
The last batch i did i used mango jacks m20 and was very happy with the result, nice bananna, clove and vanilla. If u are adding orange and corriander wb06 is a  good choice as it wont distract from the orange

T-58 makes a respectable wit. It has peppery Belgian phenols.

Don't know anything about WB-06 - but I think it's a German weiss yeast which is not the same as a wit - and I like S-33, but it is a north european ale yeast with no phenols or other wit stuff.

wb06 is ok if you keep it at 18. it ferments fairly clean at that temp
