Food grade sealant

I doubt that'll do the job. The line that reads avoid contact with skin doesn't inspire much confidence. It has to be food grade as it'll be in direct contact with sweet wort in the mash tun. I'm planning on incorperating a few temperature sensors into my tun and I'll need to seal the holes I make.

Thats no different from regular Silicone.

Once its cured, its fine...
"may be used as a jointing compound on hot and cold water services, including potable water"

Contact the manufacturer if in doubt.

As john said, it says good for potable water connections hot and cold up to boiling.
I bought a tube to use on the threads of my thermometer in my mash tun but didnt
use it in the end as the silicone o ring did the job along with some ptfe tape.

Worked with silicone for years and never considered it as food grade. I want to fit a stc 1000 probe into a brass T piece  to measure the temp of wort passing through. Do you reckon bog standard clear silicone will do this. :)

Dammit. I just ordered some stuff off of radionics. No big deal, haven't made the circuit yet or found a second cooler box. Anyone have a good method of putting temp sensors into a cooler box? I got this: http://radionics.rs-online.com/web/p/temperature-humidity-sensors/5402805/             

The quick and messy solution would be to drill a hole and insert the head of the sensor in with the mash and seal it. Not much good for replacing dodgy sensors though. And I don't know how the packaging would react to being directly submerged in a hot liquid.
Suggestions appreciated!

Not to sure about this,is the 3 prong image the sensor and if so are these 3 prongs wire connections. If so then you need to install it in a steel probe.

What about a thermistor?
Resistance changes with temp.
Pop one of these in a S/Sthermowell with non-electrically conductive heat sink paste.

I'm liking the steel probe idea. I suppose I'd have to make the probes. Surely copper would be just as good? (I have a little excess copper) Anyone done something similar? I'm using this sensor as it operates well with the arduino uno I recently bought. Hoping to insert 4 sensors into the mash tun. 3 LED's per sensor, above temp, below temp and at temp indicators. I'm tricking myself into educating myself about electronics via my love of brewing.
