Thats a good workaround. His manifold design isnt great. He doesnt have any drains in the middle which means the flow will be concentrated near the walls.

I did a good bit of study on John Palmers online notes when making mine.

Fermenting: Oatmeal Brown, 200ish Fathoms,
Ageing: bretted 1890 export stout.
To brew:  2015 RIS, Kellerbier, Altbier.

Its not about getting every last drop from the Tun.
If you wanted to do that, don't put any grain in.  :o

The theory of better drainage is that you have an even flow of Wort down though the grains thereby increasing your efficiency by extracting more sugars from your mash.
Leaving large dead-spots means for a reduction in efficiency as grain is not rinsed as evenly.

Look up False bottoms.

Fair point rm but I like this option because it allows you to use a cheaper cooler without a tap. I would however agree that he needs to put in a centre manifold piece.
