Just do it. Nobody gives a sh**e about some wooly jumpered eejit tryin to make whiskey in his kitchen. In terms of advice there has to be literature floatin around the web and by the sounds of it you seem to have half a plan already

No practical advice and I'd steer well clear personally, but http://homedistiller.org is pretty interesting and this youtube video of guy making moonshine in a pressure cooker with animal feed  is a bit of an eye opener.
