Brewing with wheat based

Snuff

I have done loads of weizen and wit, with mixes of malted wheat and torrified wheat.
Never had a bad one yet but never quite found what I was looking for either. They seem to be missing something.
Decided to try out flaked wheat, so just ordered a small bag.
Plan to do three batches and see what I like best.
Probably go for a basic recipe like this :
2.5kg pale malt
1.5kg wheat malt
0.5kg flaked wheat
Batch one - weizen with wlp380 yeast
Batch two - weizen with wlp300 yeast
Batch three - wit with wlp400 yeast
Hops will probably be 20g Amarillo @ 60min
If I don't get what I am looking for, then start another round with the corriander and maybe orange peel.

I haven't done wits but have you tried using Dark wheat malt in the hefeweizens?  I've made a good few and the best one was 50% Dark Wheat 50% Munich. It comes out looking like a Schneider Original.
