Nice one Fergus, by looking at pics, are you posting from US? If so, NHC is getting very international then  :)
And welcome to the forum.

Ouch!!! Right part of the world, wrong country :) I am in Montreal, Canada. But, I am from Laois...moved out here a few years ago with work and caught the homebrew bug.  Only problem with this setup is the winter. Gets down to a balmy -20 to -30 here in Jan/Feb so that is where biab comes in handy :)

Ciderhead

Sure you'd be used to that being from the midlands and alI, don't forget to post us snow-brewing pics... naked:)

I'll have you know that Laois is the unsung jewel of Ireland. Look at what we have; Rock of Dunamaise, Portlaoise Prison and the M7. And some of Ireland's most famous celebrities come from Laois; Darina Allen, Eileen Dunne, Claire Byrne and Evelyn Cusak to name but a few. Now, how do you like them for apples? :)

DEMPSEY

And in keeping with all from Laois he assumes ye all should know the rock of Dunamaise. My sister in law lives in portlaoise and her husband taught me about this place. You used to be able to see it from the road when you travelled from Dublin to the South east and had to pass through Portlaoise.

@fergus: brewing in -20 or -30 sounds like a challenge

@ciderhead: you shouldn't ask for brewing in snow pics John, you live in Wicklow unless you're more interested in 'naked' part  ;D

Found out

I could see a typical brew day going something like

Start boiler and defrost 1ft of frozen ice for HLT...
No chilling coil required
Try to get boiled wort into fermenter before it sets solid

What, not everyone knows Laois' most famous landmark....after the prison? For shame :) As for winter brewing here, yep, definitely is a challenge when forced to do it outside. That is why I am brewing as much as I can between now and Dec to have kegs on hand and then if I need to brew in Jan/Feb, I will do biab on the cooker without having to leave the warmth of the kitchen :)

hahaha, aren't we blessed with lack of harsh temp?
