Just doing some research on Irish microbreweries. Which was the most recent to open? I'm talking about micros that actually have premises, so not Brown Paper Bag Project for instance. And how many are there now - about 21?

Most recent would be probably be either BrĂș or West Mayo.

There's a thread on Beoir that lists all the newest ones but after a quick count in my head I got 25 microbreweries who actually have brewing premises.

Actually...

Holy Mountain Brewery, Mayo put this photo up a few days ago so they might be the most recent to start selling.

Holy Mountain:

"So the plan now is to get licensed in October and do a few brews before we launch our beers for sale sometime before Christmas. The beers we make take time to mature before bottling and we want to be sure that we have sufficient stocks in storage before we start selling."

Blacks are installing their brewery right now.
On tap: Flanders, Gose,
Fermenting: Oatmeal Brown, 200ish Fathoms,
Ageing: bretted 1890 export stout.
To brew:  2015 RIS, Kellerbier, Altbier.

Yea I think Sam's brewery is being installed this week so that's probably the newest if you're trying to be accurate next week!

Not licensed, so if they are selling it was produced by someone else. Unless they got the licence on 3rd September.

That pic was from a food fare. The gave free samples at the event (120 litres got drank). Source: Their FB page.

Here's one place to find out about the newest breweries... http://beerireland.ie/shop-2/books/irish-microbrewery-guide/   ;D
As others have said, Blacks is probably the newest to physically set up. Here is a picture of Sam on a forklift to prove it (posted to their FB page 5 days ago)

Sam's is in place, not far off ready to go.
