Recipe - AG - Christmas Honey Nut Brown Ale

Might be a nit late but got my Christmas been on the go today.
Its based loosely on Rogues Nut Brown Ale.

Batch 23 L
OG 1.068
IBU 25

Marris Otter 3.00 Kg
Vienna Malt 1.00 Kg
Flaked Barley 0.65 Kg
Crystal 30 0.56 Kg
Wheat Malt 0.50 Kg
Special B 0.32 Kg
Brown Malt 0.13 Kg
Chocolate Malt 0.08 Kg

Honey 0.90 Kg to be added at high krausen

Magnum 14% AA 16 g @ 60 min
Home grown Tattnenger 20 g @ 10 min ( unknown AA )

I also bought a 115ml bottle of hazelnut flavor that will be added before bottling

Mashed @ 68 for 60 min
Yeast WLP004 IRISH ALE YEAST

Thats a lot of honey. Are you boiling it before adding? I take it that the 1.065 OG was pre-honey additions?

I think 0.9kg of honey could take that up to an actual OG of 1.080+

No the OG includes the homey addition.
The honey has added 2 days in once the yeast had reached high krausen. No boil. Was sealed Boyne valley honey.

OG pre honey was 1.054

I've brewed with honey a few times and time is a major issue. Will be left as long as possible and if its not ready for Christmas its not ready for Christmas. Any other beers I've brewed before the similar honey additions have finished up and good in less time.

Was the honey flavour noticeable in your previous beers or was all the honey just 'consumed' by yeast and converted into % ?

Well it didn't make Christmas but just popped the first bottle of the nut brown ale. I decided to only go with a demi with the chocolate extract just in case it didn't go well but I'm quite happy with the end result. Lovely rich mahogany color. I don't think i can pick up any of the honey but that may be down to the sweetness from the chocolate extract. Surprising how well the head sticks around.

Lovely chocolate finish. I don't know how much of this I could actually drink of it but its a really nice drop. Could see it going well with desert after a nice meal.
Overall I'm quite happy with this. Still have lots if extract left so may try it in something like an american stout next time i get to brewing a batch.
