For me, the best cover version; better than the original, is the Rolling Stones' version of Buddy Holly's "Not Fade Away". Then again, The Animals did a also a far better job imho of "House of the Rising Sun" than Woody Guthrie. Just showing my age, methinks  ;)

One of my favourites was from a compilation of cover versions from 1992 which included many excellent covers, called Ruby Trax.  It was released by NME to raise money for the Spastics Society.  Track listing here:
