Just been fiddling around with a stout recipe. But what does the number in the "Balance Value" at the top right represent? And what figure should I be aiming at?

It's a auto calculated value and it represents BU:GU Ratio (Bittering Units to Gravity Units)
Always ignored it :)

It's to do with the perceived bitterness of the beer.  Like BU/GU, but it takes attenuation into account. A sweet beer will be less bitter tasting than a dry beer.  It depends on the beer style and their guess at how well it will attenuate.
In primary:
In secondary: Wine, Melomel
In keg: Teddy Hopper, Coconut stout, 4 Cs, Buzz bomb, Never Sierra, Bock, OD
In the fridge: Helles Lager, Hob Gob
