pineapple cider

I love a little experiment now and then and found this quite exiting because i love pineapple and its a quite easy brew using pieces of fruit and not juice.

I bought this last year at my local brew shop.. I checked and they only have 15, 25 and 30 liter buckets now..
I ordered it to do some small projects to experiment a bit.. I also use it to bottle wine but cant find the 10 liter anymore :(
If you can make soup then you will also be able to make a decent beer!

Racked the cider the quick and dirty way today. I saw a lot of slush at the bottom the dead yeast and small pieces of pineapple so put my bucket up and put my DJ under the tap and just let it run out. I did not want to have the risk of clogging my syphon and was hoping on the extra bit of juice from the fruit. And it turned out very well have a lot of fruit left and a nice full bottle :).





If you can make soup then you will also be able to make a decent beer!

Pineapple is strange stuff. It has an enzyme in it that attacks protein. It was impossible to make a proper pineapple jelly until Heston Blumenthal came up with a technique to add a little fresh chili. Not sure what application that has to brewing except that it might affect the protein content of the yeast and damage it. Was it easy to ferment out? Did it take off fast?

And pineapple is a strange fruit but made some wine last year with fresh juice and that came out great..

the fermentation was quite slow but took off in about 12 hours.. Then saw the first pieces of fruit floating up and down and some realy small pieces.

after that it gave a lot of big bubbles on top of the fruit and that died off in about 3 days and then only some small bubbles at the bottom at the fruit and the sediment was building up.

will now leave it for 4 weeks and then bottle and have a taste..

and if it tastes like shit then it was a nice experiment to do and it and lost about 3 euro on the fruit :P

and if it turns out well then going to try some other combinations tropical fruit. Pineapple with mango and put in a red chilli to give it a bit of a kick. Probably can think of a lot of other combinations or fruits to try  :)

I think that all the acid in the pineapple and the apple started a malic. It still smells great but it has a strange almost like powder foam on the cider..









I hope that the fresh pineapples are still on sale the last time they where €2.50 for two pineapples.. So will get 4 today and go for a 20 liter batch :)

An interesting fact about pineapple juice. If you drink 2litres of pineapple juice and blow into a breathalyser you will fail.

unfortunately no. It only works on the roadside test and it must be consumed immediately before taking the test.

Some UCD students came up with and tested it when the mandatory alcohol testing came in.

Inmagine comming back from the gym had some nice pineapple juice and get pulled over on the way back home.. LOL

But just went to the market and they had realy big pineapples for 2 euro a piece. So could not resist and bought 4 and just put them on a scale and combined they are 11 kg  :o

I think i will be left with about 10 kilo when cut of the top and the bottom..

I was planning for a bigger batch of 20 liters but I think this is enough to make 40 liter  ^-^

just botteld it today will leave it for an other week to carbonate and have a taste test :)..

With the other pineapples I made a 2x20 liter that is still in secondary and will leave those for a few weeks :)
