I have hit a wall as in I'm drowning in booze so maybe it's time to brew something that will take a long time to mature
So any ideas welcome  ;)

Never made one. Practice makes perfect .....can you recommend a recipe ? All grain.

When will a stout like this be at its best all going to plan that is .....1 year ?

Or you could do an Oud Bruin, a few of us will have the yeast culture going for free in a week or so.

Good one also.....but I haven't been overly happy with me beers so gonna try keep it simple and use some yeast powders for few brews and keep it simple. Need to nail down some things before I nail down liquid yeasts .....pitch rates....stir plates ect.

Don't get het up about stir plates....use Whitelabs or slurry from someone else and my malty calculator and it's easy. But yeah go at your own pace. :)

Something Belgian is always good put away for a while. Petty simple recipes and a workhorse like WLP500 and you will never go wrong. Only gets better with age.
