Jalapeno, cucumber mead

I could not get this recipe out of my head. I like hot peppers, it takes a bit of practice to eat them but if you finally eat them its great. Most chili or hot peppers have a great taste. still have a lot of honey left and some empty DJ`s so ordered some jalapeno online and now its time to brew :)

recipe 5 liter:
1 large cucumber
4 jalapeno
1.8kg flower honey
yeast nutrient
mead yeast

I am writing while brewing this. I have to wait untill my jalapeno, cucumber tea or should i say fresh hot soup is ready.

Could only order a kilo jalapeno so the rest is going in the freezer for later use.

Cleaned the cucumber and jalapeno that i am going to use and put on some protection.



cut open the jalapeno and removed the seeds



cut it all



put it in 2 l of boiling water and will leave it for about 30 minutes with a lid on the pan to make a soup, tea  :eh:



had a little taste of the soup i made and it was actualy nice. It was a faint cucumber taste with a light heat in the back of the throat. Then added the honey to the soup.



on a very low heat stirred in all the honey and let this cool for 10 minutes ofcourse had to taste this. The honey added a nice twist. first getting the cucumber taste and then a bit of heat and then the sweet honey taste comes in. Then poured it in to my dj and put in my yeast and yeast nutrient and topped off with water.
If you can make soup then you will also be able to make a decent beer!

found the recipe on a forum somewhere where people post their strangest wines so had to try this.

But tried a bit of the jalapeno without seeds and with seeds but the seeds where a bit to much :P. But if this turns out good going to brew this with suriname red/yellow chilies. they are 10 times hotter then the jalapeno but they have a great taste so have to figure out on how to use those in a brew :) probably will make the soup with whole chilies and not cut them up that will be like making firewine :P.

the cucumber gives a bit of cucumber veggie taste to the wine quite strange but its nice in combination with the honey and the bit of burning of the chilies :)

Adding an alkaline to the chilis might neutralize some of
the heat, seeing as it's an acid. That way you get the flavour without
all of the heat. Sounds feckin' interesting anyway. Puts my
plans for a methglyn to shame.

sugar/sweet will also get rid of the heat. You dont want to kill all the heat because the little kick of the heat..

But its easy to see how it all reacts by just taking a cup of water and put in a slice of cucumber and a little bit of chili and let that sit and warm it up again in the microwave to dissolve the honey.. this will give a little idea on how the chili give a little kick.

I want to use a suriname red/yellow, habanero and strawberry in a mead. I have tasted this combination in a icecream and that had the same effect the sweetnes of the strawberry (and sugar) mellow down the heat.. I am just figuring out how to make this because both peppers are about 10 times hotter then the jalapeno but they both have a great aroma... I know the south american dutch colonies the antillen and suriname these peppers are the main ingredient in most cooking.. But they leave the chilie`s as a whole so it gives the beautifull aroma and a little of the heat off to the dish.

So will probably make the soup with adding the whole chilies and have to do some tests to see if i want to make a sort of stock with the strawberries or if i should add a bit of juice to this.. And this will also be a good test to see if i am not making any fruit flavored fire water :)

I racked the mead a few weeks ago and added some cut up cucumber and jalapeno and added this into the racked mead to infuse into the mead. Had a little taste and it tasted like a sweet fruity flower with a bit of heat. I could not realy taste the cucumber back in the mead. It was an unusual taste but not bad.

when the cucumber was in the mead for two weeks racked again and now it slowly clearing. Its still cloudy but its slowly getting clear. I think this mead needs a longer time to mature to get to full taste.
