Or just go biab until it annoys you and then swap to steel, like you say. Skip the intermediate state of stuff you'll just need to get rid of later.
Fermenting: IPA, Lambic, Mead
Conditioning: Lambic, Cider, RIS, Ole Ale, Saison
On Tap: IPA, Helles, Best Bitter
