Brewed the homebrew company's pilsner mash kit the other day and all went well I added a small quantity of Columbus hops at 0 15 60 since the kit was nearly a year old and the hops supplied were a bit dry smelled nice though so I threw them in too. Wasn't expecting much when I cut open the bag but the grain smelled lovely so I decided to trust my nose and brewed it up and it smelled great in the fermentor when I pitched the starter. From not expecting much I now have high enough hopes for my first lager.

The yeast supplied was saflager s-23 and while it has mixed reviews online I went ahead and used it and it's doing the job with bubbling starting this morning I have her set to 14c and I'm wondering have any of you experience with this yeast and any tips on lagering schedule. I'm going to raise her up for dms since it's my first and taste it to see if I can detect anything. Is it important to lower gradually into lagering phase or could I set the stc to 4 and leave it alone
