Third batch of RIS is currently slumming it in my kitchen along with an American pale ale I did a few weeks back.  Planning on storing most of it in a corny keg once it is done and will top up the barrel periodically.

The barrel sample went down rather well last night. Shiny, McGrath and Beerfly all seemed pleased with the way it's progressing.

The sample from last night was a good bit warmer than the sample we took directly out of the barrel last week and as such, it was showing a lot more caramel, booze and dark dried fruits. Brewtus remarked that it has some port/sherry flavours poking through. Absolutely fantastic stuff, really pleased with it.

Lads, what were your impressions?

No it's still in the barrel.  The last sample still tasted of whisky but feeling was that it had mellowed out.

CH is going to try carbonate some of the beer for competition and also for us to sample at the next meet towards the end of March. At the same time he is going to try carbonate two bottles for the competition.

Just a heads up that we will probably also look to empty the barrel over the may bank holiday exact date and time to be confirmed so all contributors please get your cornies emptied in preparation to fill them with the barrel beer.

Hi Shiny,

Was talking to Rossa briefly yesterday and he suggested he could bring his pump along and use the same process ye used to empty the capital brewers barrel. Even if everybody can't make the emptying date with a bit of luck we can have  organised everybody to have kegs dropped over so we can just do one empty session. Don't really want to haveto do multiple emptying sessions as it will bock us from being able to refill the barrel. Don't mind helping people out with keg collection and drop off once it's emptied.

Will post more detail as I get responses from people.

Opened a bottle of O'Haras' barrel-aged stout there last night. Decent enough, but not a patch on our barrel brew.

Anyone planning on bottle conditioning their porter?

Yeah I was going to bottle condition mine, just need to decide on what yeast to use. Bit paranoid about it not carbonating.

Might not be a bad idea to seek some comment from others who have done bottle conditioning of a 10% beer.. I was thinking of force carbonating all but now think i will bottle condition some also. Need to get my hands on some 33cl empties.
