NCB Barrel Project 2

Ok so after talks in the Boro lastnight the timeline has been decided and recipe ingredients divided out.

The timeline decided upon is.

Please note - starting a day or two early or late is grand - but we all have to finish at the same date !!

Sat 09th Nov - Brew Day
Sat 16th Nov - Primary in Full Flow
Sat 23th Nov - Primary Finished - Move to Secondary - Add Dry Hops
Sat 30th Nov - Secondary Finish
Sunday 1st December - Move to Cask.

The recipe and ingredients divided out should get everyone to an OG of 1.091



Barleywine Recipe.
23L Batch size
OG 1.091
IBU 104.8

Malts:
3.00 Kg LME
Marris otter 4.75 Kg
Amber Malt 0.50 Kg
Crystal 80 0.50 Kg

Apollo 19.50 AA 35g @ 60 min            ( 73.5 IBU)
Apollo 19.50 AA 35g @ 20 min            ( 24.7 IBU)
Centennial 10.50 AA 35 g @ 5 min      ( 6.6 IBU)
Centennial 10.50 AA 40 g @ Dry

Possible dry hopping of the actual cask will be be decided at a later date.

If anyone is short of centennial you can sub in cascade to make up the numbers.

Mash : Mash at 68c for 60 min.
With the attenuation of the Nottingham this should finish up at aprox FG 1.016 - 1.018

When adding the LME for anyone boiling with kettle elements be careful as pouring straight in can scorch and burn out the elements. I plan on taking 4-5L out of the kettle, mix in LME and add back into the kettle so its fully mixed with about 10 mins to go in the boil. Lessen the chances of it sticking to either the bottom of the boiler and the elements.

Plenty of aeration will be needed and nutrient added if you have it.
Much the same as the RIS I'm sure a blow off pipe will be needed of this one as well so might want to plan that as well.

Wont be able to brew before 8th. The closest possible date for me would be the 10th. That still leaves 2 weeks for primary and a week for secondary :)

Question about LME cause never used it before.
Will I have to collect less wort before the boil? Are 3kg of LME going to increase wort volume in the boiler, if so by how much?

Good question. One for the extract boys I'm afraid. At a guess id say aim for apox 3 L less. That's what I'll be going for unless someone can some up with a tried and tested answer. Final volumes can be fixed before the end of the boil i suppose.

That's the thing. Don't think that 3kg of LME = 3 liters

Ok, here's what I found:

Wishfull thinking but anyway:

Due to the AJ delivery hiccup the brewery is now clear of cider and wine  :)

So tomorrow will get the brew on. I need a bit more than 5 gallons so have upped the MO to 5.5 kgs (checked with beer smith)

Will post some stats tomorrow. Haven't brewed in months so have got the Karma in place, just relaxing with a few HBs and Lidl Quiche(Have I recommended this to non-programmers)

So today was the day!

[InJoke]: Should have added this to the calendar! ???

Mod to nigel's recipe: Used 5.5 kgs of MO as I wanted a few litres spare!

Mashed all the grains and took out 20 L at 1.073

Took out another 2 litres then and used that to disolve the LME this gave me 4 litres of LME. Boiled on stove top.

Started boiling/hopping the 20 L. After the initial foaming subsided added the LME wort

At end of boil had about 23 L at 1.100  :)

Chilled and air-ee-ated!

So used Beersmith's dilution tool and added 2 L of water to end up with 25 L at 1.092  :)

Have re-hydrated the Notty, taken out 3 L into a demi-john and pitched both!

The smells were/are epic

Great stuff Will. I plan on getting mine on the go during the week. What do you think of the Apollo?

Just checked the software and the pre LME OG is 1.041 . Based on 65% efficiency.

Thought both hops smelled delicious.

BTW: Now fermenting like a rocket - even though I had pulled out 3 litres still got a blow off! Looked like a great brown brain sitting on top of the FV!!

So whipped down the foam, scrapped of the dark brown yeast and fitted a blow off tube to airlock. May have to take some more out into a DJ if it keeps on going!

Lads,
I'm conscious of hitting targets for this brew (don't care so much normally when it's just for myself).
My plan is to mash with 14.5L of water for the 5.75kg of grain and to sparge with 16L (2x8L) of water. 
This should give me approx. 25L in the boiler with a further 2 - 3L for the LME to give me about 27 - 28L. 
Allowing for evaporation and hop soakage giving me 23L in fermenter.
Is that right?

Will double check those numbers from home, but in my case it's usually ~27-28l for a 20l batch.
