Gluten Free Beer

Whitelabs produce a clearing solution called "Clarity Ferm",which allows a brewer to brew a standard beer and then using this clearing agent,reduce the gluten to approximately 20ppm. Has anybody ever used this and how did it work out.

The world's leading expert on gluten free beers is a professor in the brewery in UCC. You could always give her a bell ;)

I have a post on beoir looking for a gluten free recipe.  this could be an option!

I recently took a tour of the UCC brewery.
On that day She wasn't around but the other brewing professor was telling us that's one of their major areas of research.

Great to hear.  I never knew they had a brewery there - is that part of their food science course?

Most of the students dont even know its there.
Its a beautiful bit of kit and standing idel most of the time.
AFAIK there are only 2 students and the 2 professors using it, I think it's used as an extra after food science or some such.
