Tea mead and Hop mead

Got a hold of some cheap honey from a beekeeper last week. Today had some time to get some hop and tea from a herb stand at the market. I dont know what kind of hop it is and the tea is PT sante its their own mix i think..

hop infused mead

1.8 kg honey
15 gram dry hop flowers
0.5 tsp yeast nutrient

tea infused mead

1.8 kg honey
40 gram spiced fruit tea
0.5 tsp yeast nutrient


warmed the pots of honey in a bit of warm water and poured it in a big pan. Added about 2 L water and slowly warmed the honey and water untill all the honey is desolved and got the mix of the heat. Poured it in a bottle and put in the tea and hops and yeast nutrient. Gave both bottles a good shake and covered them with a panty hose..

The idea is to let it ferment completly natural and use the natural yeast that is in there and you need some air but want to keep the nasty things out..

I am aware that the wild yeast is a bit of a risk because you never know what the taste will be like, but total project costs 8 euro for the honey, hop and tea so will take the chance :)

Have been busy with a lot of things the last few weeks and brewing is on a hold for a bit but managed to rack the wine yesterday and had a quick taste.

the hopped mead had a nice hop flavor to the wine, not to overpowering but just enough to taste it. There is also a strong honey taste to but added 1 liter of water to fill up the bottle after racking so this will mellow down the taste a bit.

the tea infused mead had a good honey and tea taste, there is a lot of mint in the tea and you can realy smell and taste the mint and after that the rest of the tea taste comes in :).

Will leave it for an other week or so and then rack again to get rid of the last yeasties and small pieces of tea and hop..

both meads are in secondary for some time now and the tea infused mead has a nice color and is clearing very nice. The hop infused mead is stil cloudy so i think this also needs some aging to get clear.
