brewing this up today, cant wait for it such a big crazy beer, can only make 19L cause of all the grain and the limits of my pot so ill probably end up with 14L by bottling  :-[, the recipe calls for 40L crystal but i bought 30L by mistake but hopefully it wont effect it too much. first time messing with water chemistry so hopefully it goes well and i dont reck it. cheers to delzep for the yeast by the way

Qs

baphomite51

its been a disaster so far volumes gravitys were all over the place iv been adding in and taking away water pure night mare but anyway iv hit my pre-boil gravity and and volume has gone up by 4 litres so iv had to increase all the hops so im using even more now 371g for 23 litres :o crazy stuff

nigel_c

That amount of hops is going to soak up a massive amount of wort.

baphomite51

i know im dreading transferring it to the fermentor, they are pellet hops tho so hopefully it wont be too bad

nigel_c

let it sit longer that normal before you start transfer. You could transfer to fermenter let if sit a few hours and then transfer to another before pitching to try drop as much out as you can. For really big IBU beer like this you should look into hop extract. Its what a lot of the big guys do to get massive ibu's.

baphomite51

Ye I wanna start using hop extract but the recipe called for Columbus for bittering so I said I'll follow it

Qs

Do any of the Irish HBS sell hop extract?

baphomite51

Yup hbc and hbw different types aswell bittering and flavouring dunno how I'd feel bout flavouring tho

nigel_c

I used the HBW hop extract in some big DIPA's and found it great. Saves a hell of a lot of wort that you would loose with hops.

Qs

Where are they on the HBC site?

Yeah the flavour tablets look like they might be a bit weird. And wheres the fun in flavouring an D/IPA without real hops?

baphomite51

there it is there https://www.thehomebrewcompany.ie/isomerised-hop-extract-30ml-p-1084.html

anyway i figured out how i messed up  i thought i messed up my mash and got crap efficiency but the problem was i didn add the sugar before taking the pre-boil gravity i got 24L at 1.055 with out sugar giving 67% effeciency, but with sugar it would of been 24L at 1.059 giving 73% effeciency. it took hours of messing with water additions to hit target. then near the end of the boil i took a gravity reading which measured 16.5 brix (1.071) then after cooling i took a reading with hydromoter and got 1.057, this makes no sense, i dont know whats goin on. iv got 20L AT 1.057 from 30L at 1.051. using the boil off calculator and taking into account say two litres for hop absorption, boiling off 8L should give me a gravity of around 1.069 i cant figure it out its like the sugars are jumping out of the pot. all readings where temperature corrected and checked with hydrometer and refractomoter

delzep

I brewed more or less this on Friday meself. Used 334g of hops and Notty instead of US-05. Will trade you a bottle for comparison if you want

baphomite51

Ye definitely man sounds good looking forward to trying it wen it's done, u splitting the dry hop additions 7 days and 5 days?

delzep

Yeah first one for about 8 days then add the second one for about 5 days. Should get about 30 bottles out of my batch hopefully. Hit my target OG of 1.076 so happy enough so far
