Thermopens are all calibrated and come with a cert of calibration if you want hyper accuracy go with the thermopen.

Did you read the reviews of that

Looks far more impressive in the photo than in reality. You cannot even recalibrate it (mine was 2℃ off) and you cannot change the batter. It lasted a week before it stopped working. Very poor build quality. It looks and feels like a cheap Chinese knock-off of a better thermometer which is what I should have bought in the first place. My advice is to spend more on something you will be able to rely upon.

When inserted into meat it tells me random temperatures all over the place. I inserted the probe into a pork shoulder that had been cooking for 8 hours and it told me the temperature was -20. I tested it a few other times and the temperatures were completely erratic.

57 out of 63 are 5 star reviews....sounds like a couple of faulty ones the 1 stars.Think I'll risk it.

You say that but there's a good chance it won't. I mean by the time you add the three purchases together and include shipping you might have well have bought one Thermopen....

I've had about 4-5 shit thermometers, the thermopen is where I'm at now

An industry calibrated thermometer is an investment. Clubs should invest in one and people can calibrate their thermometers to it. Or for the price of the one posted, get your own.
A badly calibrated thermometer be the difference in a beer finishing at 1.010 or 1.015. BIG difference in final product.

Thats the mistake I made. 

I bought a meat probe from argos http://www.argos.ie/static/Product/partNumber/9013775/Trail/searchtext%3ETHERMOMETER.htm which goes a bit nuts when steam hits it. 
one of these..  complete waste of time.

And a regular brewing glass thermometer from brewing shops.  Not great..   

I don't really trust any of them and now use one of my stc1000.   And I have no confidence in that either.

Commercially you just buy a calibrated thermometer per year.

Why?

Coz: its cheaper than having one recalibrated and certified in '.dubland'

The older ones are then relegated to "secondary standards/use" and are cross calibrated to the one that is "in cert"

Or they disappear. I "know a place" that dumps calibrated box probes when that batteries go. I shit you not. I have spares.
