Rye Saison Help.

I have just over 5kg crushed Rye Malt here that i want to use up and i got the idea that i could do a rye saison,saw a video on youtube from basic brewing channel where they did a small batch 100% rye saison that seemed to turn out pretty good.However i have been told since that this might not be a good idea ? ;D

Basically i want to come up with a recipe or two at most that will allow me to use up that 5kg rye malt asap.Now i know little about using rye as i just used it as an addition in a recent bitter kit i did and it turned out great.However going with a bigger rye malt bill i have no idea on that. ;D

The only other malts i have open atm are pilsner malt,chocolate malt,and medium crystal malt.Hops wise i have EKG and Magnum pellets.Yeast in stock is Danstar Belle saison dry yeast. ;D

I've only ever used a max of 20%  rye. I believe that after that you need to start messing around with adjuncts like oat husks and the like so you don't get a stuck sparge.

That's what i have heard too,but i have also heard people use Rye Malt for as much as 60% of the total grain bill ? ;D

Anything over 20% rye and it's going to get awful sticky. I wouldn't imagine it to be a major problem in a biab sense but in a normal mash tun it's gonna be awful messy.

I think one or two of the shops sell oat husks now. does the same thing.

Hi Greg, I like Roggen beers and use up tp 20% rye. This is a bit borderline.

If you want to use a lot more suggest you experiment with some micro mashes:

You have lots of rye!

So just try 100 gms of rye mashed/steeped in different volumes of water

Try 1 Rye to 2.5 water, and then 1 to 3, 1 to 3.5, 1 to 4 etc and see how gloopy/sticky they really are in a small saucepan or the like! Hold at about mash temp on stove for about the mash time!

The Roggenbier in Brewing Classic Styles uses nearly 50% Rye. You could try that.

Great idea there boss,i feel and experimentay coming on(as a friend of mine would say.) ;D

Edit: Just had a brain fart moment(shut up CH :P),it might just be better to do two or three mini BIAB batches with varying % of Rye/Pilsner malt in each in some demijohns,feck it if i am going to be mashing small  amounts anyway i may as well do two or three small batches and spilt the packet of belle saison yeast between them,then bottle and see the difference between the different ratios ? ;D

The more i think about it this makes sense,before committing to a full 5 gallon batch maybe do two smaller ones.One with say 20% rye malt and one with say 50% rye malt,possibly a third with 100% rye malt,all one gallon mini batches. :o

I will check out that Roggen beer down the line but first i want to see how i find the taste of rye at varying % as i have only ever used it once before as a small addition to aid head retention which worked great actually. ;D
