I made one of these in the SD brewers forum to provide quick and easy access to all the need-to-know information for the barrel project. Some of the stuff is only a provisional suggestion so things will change and I will try to keep this thread updated.

Can I suggest that samples are taken to bring along to our tasting evening on the last Tuesday of the month?

Slots 9&10 could be brewed at tog maybe?

well lads, Im transferring to a secondary this week as I guess we will have to store it for a bit to get organised.  Has everyone brewed?  Just wondering what the status is as its gone a bit quiet and Im looking at this stout like a ticking time bomb for infection.....

Ah Im just wondering if we have a rough plan and if everyone got the brew on.  Ill put it into a plastic keg I don't use and leave it in the closet till we have an idea.

Just putting it into secondary, 1.031.....hmmm

Added half a teaspoon of yeast nutrient to encourage it the rest of the way. 
Tastes absolutely fantastic though I think the bitterness is perfectly balancing the sweetness at the moment, normally the bitterness at this stage of any of my imperial stouts is nearly burning the back off my throat.

I have never finished this high before but I have obtained that level of attenuation with this yeast before. The last time I used WLP004 I got an attenuation of 68% and sure enough I have got 68% again this time. The spec's (http://www.whitelabs.com/yeast/wlp004-irish-ale-yeast) for the yeast give an attenuation range of 69% to 74% so its not that far off?

I didn't take any steps to get the batch lower the first time it happened so I'm hopeful I will be able to get it to drop a few more points before it goes into the barrel. 

As a precaution I'm going to grow up some San Diego yeast (Kindly donated by Dr. Jacoby) and pitch that to get it down further.

I jsut sent out a feeler for storage, we still haven't a place to put it nailed down!

I saw the picture of the liffey brewers barrel and it looked lonely in a big empty shed all on it's own...

But on a serious note, does anyone have a place we can store it?

Rent a storage unit for 4 or 5 months?

I tried pricing them but they all require you to contact them for a quote. Minimum looks to be €50/month

Now that I'm officially paid up as a Capital Brewer, I should probably offer my services  ;D

I have access to a large bricks and mortar shed in Naas. It's within the Pale so not too much of a psychological stretch for the inner city crowd. I used it before for the barrel project I was involved in a few years back. It's stays nice and cool in the summer months and there's plenty of spare space.

I know it'll be a bit of a journey for most of you but if you're interested let me know and we can sort something out.

All,

The publishing team are currently look at the best ways of documenting the NHC's fantastic "Barrel Project". We've decided to create and publish a series of articles on the project over the next 6 months or so.

The series will cover technical aspects of aging beer in barrels, purchase and delivery of the said items as well as a report from each individual club barrel at various stages of the process.

To achieve this aim, we will need a nominated representative from each barrel project who is willing to supply us with the necessary information like recipe, barrel siting, filling, tasting notes, competition success etc. Photos would be great too, if you have any. If you're interested in being your project's rep, can you attach your name to the thread below?

It is looking likely that we will be able to store the Barrel in TOG.

So I guess we need to start thinking of a filling day! Would we like to do it on a week day or during the weekend?

I will nail down definite confirmation of this but we're most likely getting a spot in the server room which was about 10-15 degree's yesterday in the heat so is ideal for barrel storage!

Yea, we've already designed various monitoring devices that are available for remote server access, but unfortunately due to various patent applications I cannot divulge any more information.


On the Filling, I will check with Tog when they are available and when we can get the barrel, which is hidden in a top secret location at the moment!

Dempsey is sorting the stillage-the barrel is sat here beside me. She's been rolled daily and extra spirit added a few weeks ago so there will be no issue of drying out hopefully. The rolling hasn't been as efficient the past couple of weeks but rolled none the less

I assume Rossa is collecting the barrel and stave from CARA at some stage. Not everyone is confirmed as brining their brew over today but I assume that is ok, i.e. we could fill it with the remaining beer at the next TOG brewday or something.

Other than that, Cathal, I don't really know what is happening yet.

Tog is open from 19:00 to 21:00 this evening, they might be there a little earlier or a little later but that's all i know for sure! I'll tweet at them to see if anyone is about earlier. www.tog.ie (http://www.tog.ie) has a little open/closed icon on the left hand side of the page so we can check later.

I will also tweet the girl running tonights event, so keep an eye on the twitter!

I'll also bring gas, two sets of disconnects don't line and splitters, star san and a reg. I'm am a bit short on beer line. I've one length. We could do with at least two as we can push two cornies at a time.

Im gonna swing by and drop my brew off, I wont be able to hang about though.  Hope thats alright with everyone? Shiny will take my fermenter for me.  Im a good bit shy of 20L as well im afraid.

I would say between 40 and 60L off, the beer was still with a good bit down after putting in Joey's beer.

Jules has moved to athlone but will be back to host us on brewdays!

Would it need a few months to bottle condition as its such a big beer?

Also I think we should refill it with the next beer as soon as we empty it so it doesn't dry out. If so we would want to be thinking of recipes.

Got a sample of the beer today. Will bring it along to the next capital brewers meet.

Initial comments:
Lots of oak (This factor alone will be the motivating factor to empty the barrel)
Whiskey is there but subtle (thank christ)
Quite roasty but this has mellowed significantly over the last 4 months
Gravity is 1.012 but it seems higher as the body is chewy/velvety and smooth, carbonation will offset this
Not much aroma but then again there was no carbonation to encourage that

I had a taste on Sunday also. I would highly recommend that this comes out asap as I wouldnt say any more oak would be favourable-we could run the risk of it turning out quite "charcoaly" like some previous commercial examples.

As we don't have a key we will be relying on when someone is there, http://www.tog.ie/ (http://www.tog.ie/) has a calendar and the following things are on:

Your right about the pump, a syphon wont work unless we raise the barrel which would be impossible. We could keep pumping the syphon but that would be a pain.

You could probably repitch yeast when you bottle, unless you are leaving it in the keg.

I was going to put in either San Diego yeast or US05. I'm leaning towards the US05 in case the SD yeast causes bottle bombs.

I hear Notty is good, in that it floc's to the bottom very well, but I have no idea if it's better than other yeasts or not! I'll probably use US05 as there is some in my fridge!

If we put the pump on the ground which would be lower than the lowest point in the barrel, run a tube into the barrel from the intake and another from the outflow to the kegs/buckets/etc.. Just leave the pump going and have all the empty vessels lined up ready to take the beer.

I assume the pump needs to be primed?

We were talking about this last night. Perhaps making a much lower ABV beer (~6%) to ease the strain on people's mash tuns. Any interest in filling the barrel again?

We definitely have to give them something for taking up that much space for months. Something like a tenner each? I have their account details for transferring my membership every month, I could easily transfer money on behalf of the barrel participants.

Also we really should be giving them a few quid every brew day, we haven't done this the last two months.

Took a good bit out of the barrel this morning. This is how things stand at the moment in terms of what is still in there:

01. Shiny - 20L
02. CARA - 20L
03. Padraic - 20L
04. Cathal O D - 20L
05. Rossa - 20L
06. Rossa - 20L
07. Thomas - 20l
08. JoeyD - 20L

We all took around 17L each so Padraic and Joey will probably have a full 20L each. We can get the last two shares out at the next brewday and then fill it up with water until the new beer is done. I expect that we wouldn't be filling it until January.

I was speaking to Cathal and Emma yesterday and they have a recipe done up on beersmith for the new barrel. The club has grown quite a bit since we filled the barrel initially so there would be enough interest to bring the number of contributors to ten and fill it to the brim this time.  Whatever yeast is chosen I will do up a slant for each contributor as its probably going to be an unusual yeast that no one would have already.

Barrel has been completely emptied, Padraic even got a couple of litres of yeast.  ;D We didn't rinse out the barrel so just topped it up to the brim with water so its not going dry out.

I have mentioned it a few times that we should TOG a few quid as their back is up against the wall with the 1200/month rent and bills on top of that. I already have a direct debit set up with TOG for my membership so I can transfer the money to them without any of it being leached by paypal. Also I think some people still have to give CARA their share of money for paying for the barrel. Send me a PM if you want my details and I can pay both.
