At the Fowlers meeting we mentioned that it would be a good idea to set some deadlines for these casks.

So shall we say the last weekend in Jul (Saturday 30th/Sun 31)?

That's 4 weeks away?

Are we good to go on this timeline?
Remember: The Nationals are just round the corner - time to get brewing

We can fill the casks separately with the RIS first. RIS should be done by all in a few weeks. Probably not necessary that the last couple are even fully attenuated right?

Because it's going to be aged it would be best to get as much yeast out as possible. Cut down on the possibility of autolysis.

DEMPSEY

Best have your RIS finish high and leave a lot of body in the beer. Our one is 7 weeks in and is soaked in wood and peaty whisky. Bottle next to allow it merge more. :)

Just a heads up on your old ale recipe. It is a pale beer I see and was wondering how it would handle the strong peaty and oak wood flavour that these barrels are giving off. :-\. The RIS is a robust strong flavour that can in time blend with the peat and oak but not sure a pale malt beer might be dominated by it.

We are pondering a replacement beer for our refill of the barrels now that the RIS is more than ready to come out. Wee heavy is what we are considering.
